You will need your guests Email address to correspond with them. Therefore the default for this setting is "Compulsory". You may change it though to:

not collect this information - the field will not appear on your booking page: set to not used

make it obligatory meaning your guests can not proceed the booking without entering this information: set to compulsory

show the field on your booking page but leave it to your guest to enter information or not: set to optional
